Sweet potato scramble!

Happy hump day! Hope your week is treating you awesome! I’ve been getting dinged about posting a breakfast hash for a few months and now here it is in all of her hashy glory! Since my house is sick with sinus infections I thought it would be beneficial to make a hardy breakfast. Full of antioxidants and vitamins! Here is the recipe! Enjoy!

Paleo sweet potato scramble!

Ingredients
  • 3 strips of bacon
  • 1 clove of garlic
  • 1 sweet potato, skinned & diced
  • A handful of Grape tomatos, halved
  • 1 zucchini, julienned
  • Half of a red onion
  • 1 Organic sausage
  • salt and pepper
  • 4 or 5 eggs
Instructions
  1. Cook up 3 bacon strips or throw a few tablespoons of bacon grease in a medium to high heat large pan. You will need to use the bacon in the end, so why not cook some up anyway since you need the fat from it? While your waiting for the grease to get hot, skin and chop the heck of a sweet potato! Throw in some salt, pepper, and minced garlic clove and wait for your sweet potatoes to start to soften. While your waiting for your sweet potatoes to soften, julienne a zucchini and dice onions, half grape tomatoes, chopped bacon and organic sausage.
  2. Now you can go ahead and throw your hard work, chopped veggies and meat in with your sweet potatoes! While your veggies and meats are marinating with each other go ahead and scramble some eggs in another pan. Once those are done throw the eggs in with the cooked veggies and meats!

Now you can go ahead and throw everything in! While your veggies and meats are marinating with each other go ahead and scramble some eggs in another pan. Once those are done throw the eggs in with the cooked veggies and meats!
