Chipotle Goes Paleo


OMG! You see that right? It’s even tastes better than it looks! It was one of those Friday nights where I had 1lb of ground beef in the fridge and a bunch of left over veggies and other fun stuff hanging out in my pantry and fridge.  I call it Chipotle Goes Paleo.  Its pretty much a celebration of Mexico in your mouth!

Serves: 2-4
  • 1lb of grass fed ground beef
  • 1 cup of quinoa
  • 2 tbsp of Cilantro, chopped
  • Dollop of Sour cream
  • A dash of cheese
  • ½ White onion diced
  • 14oz can of diced tomatoes, drained
  • ¼ cup Salsa verde (the green salsa)
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • ½ cayenne pepper
  • green onions, to make it pretty
  • juice of 1 lime
  • salt and pepper, to taste
For the easy guacamole
  • 1 avocado
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • pinch of cayenne pepper
  • juice of ½ a lime
  • salt, to taste
  1. Make a cup of quinoa set aside and add a dash of lime and place your 2 tbsps of chopped cilantro in there.
  2. Place ground beef in a medium saucepan over medium-high heat.
  3. Once beef has browned half way through, add onions and minced garlic.
  4. When beef has almost cooked through, add oregano, cumin, some salt and pepper, cayenne pepper, tomatoes, and salsa verde. Mix well.
  5. Lower heat, squeeze lime on top and mix.
  6. While meat is finishing up, mix together all guac ingredients.
  7. Then stack everything as pictured! So easy and so flipping tasty!
